Low Carb Walnut Tacos
These low carb tacos use walnuts in place of ground meat, blended with a mix of herbs, spices and sweet roasted pepper.
These are a great base for vegetarian tacos if you are avoiding soy products and are easily adapted with your favorite taco toppings!

- Romaine Lettuce - 4 innerleaf 
- Walnuts - 1 cup 
- Oregano, Dried - 1 teaspoon 
- Cumin, Ground - 1 teaspoon 
- Coriander Leaf, Dried - 1 teaspoon 
- Paprika - 1 teaspoon 
- Olive Oil - 1 teaspoon 
- Lime Juice, Fresh - 1 teaspoon 
- Lime Zest - 1 teaspoon 
- Sour Cream - 1 tablespoon 
- Cilantro - 1 tablespoon 
- Onion Powder - ½ teaspoon 
- Chili Powder - ½ teaspoon 
- Garlic, Powder - ¼ teaspoon 
- Salt, Sea Salt - ¼ teaspoon 
- Black Pepper, Ground - ⅛ teaspoon 
- Roasted Red Peppers In Brine By Kroger - ¼ cup

- Step 1 Add the walnuts to a food processor along with all the dried herbs and spices, roasted pepper, lime juice and zest, olive oil and salt and pepper to taste. Pulse to form a ground meat like consistency.
- Step 2 Divide the walnut meat between the 4 lettuce leaves.
- Step 3 Top each with a little sour cream and scatter with fresh cilantro to serve.
