Keto Christmas Maple Ginger Chicken Drumsticks

These easy Keto chicken drumsticks are coated in a festive marinade and make a great low carb recipe for the holidays. Our Keto chicken drumsticks are coated in a marinade of oil, maple-flavored syrup, warming ginger, cinnamon and nutmeg, a little orange juice, and a hint of garlic. Once marinaded, the chicken is simply oven baked until tender and golden.

Can I Use a Different Cut of Chicken?

We have used drumsticks for our Keto chicken recipe as they are a great budget-friendly option full of fats and flavor. If you prefer, you may use chicken wings or thighs with the skin on - these will be just as delicious! Please be sure to adjust cooking times as necessary for different cuts and sizes of chicken.

Can I Cook These in An Air Fryer?

We have cooked our Keto chicken drumsticks in the oven until caramelized and golden. If preferred, you may cook the drumsticks in the basket of an air fryer. Cook at 400 degrees Fahrenheit for 10 minutes. Turn and cook for a further 10-12 minutes or until completely cooked through, crisp and golden. If the air fryer basket is overcrowded, you may need to cook in two batches.

    Preheat the oven to 400 degrees Fahrenheit. Add the olive oil, syrup, orange juice, ginger, cinnamon, nutmeg, salt, black pepper and garlic powder to a small bowl. Stir well to combine. You may add more or less spices according to personal taste. Please be sure to adjust your macros to reflect any changes.

    Add the chicken drumsticks to a large bowl or dish. Drizzle over the sweet ginger marinade. Rub the marinade all over the chicken drumsticks. Cover and refrigerate for a minimum of 30 minutes or overnight.

    Arrange the marinated chicken drumsticks across a shallow oven tray. Transfer to the oven and bake for 35 minutes or until caramelized and golden and completely cooked through. Serve with your preferred low carb sides.
