Recipe Steps

1 h

  • Step 1

Preheat an oven to 350 F. Prepare a bundt pan with nonstick cooking spray. Combine the almond flour, psyllium husk powder, 1 teaspoon kosher salt, baking powder and 2 tablespoons of Swerve (icing sugar) together in a medium mixing bowl.
    Step 1
  • Step 2

Add 1 cup of boiling water and begin to stir to incorporate the water halfway.
    Step 2
  • Step 3

Then add the apple cider vinegar, vanilla extract and raw egg whites. Mix very well to combine. You may need to use your hands to combine or a stand mixer with a paddle attachment.
    Step 3
  • Step 4

Then in a small bowl, combine the rest of the Swerve (both the icing sugar and brown sugar), the rest of the kosher salt and cinnamon. Mix well.
    Step 4
  • Step 5

Roll the dough into 1 ½” balls and coat completely in the cinnamon sugar mixture.
    Step 5
  • Step 6

Begin to line the bottom of the bundt pan with the balls. You should be able to make 20-22 balls at this size. Fill the bottom of the bundt pan with one layer and then add one more layer of balls on top.
    Step 6
  • Step 7

Sprinkle the remaining cinnamon and sugar mixture on top and bake for 40-45 minutes until the bread is completely cooked through.
    Step 7
  • Step 8

The bread will collapse if it is not cooked long enough. Remove from the oven and allow to cool slightly before unmolding.
    Step 8

How many pieces is a serving size?

If you form the dough into 24 pieces, it would give you 3 pieces per serving, matching the nutritional info for serving size.

Hmmm--the Nutrition Facts (below) says serving wt is 0.7 oz (19 grams). Have I misread the info? I intended to reply to LoCar(b)

They vary, depending on exactly how large you make the balls! My best suggestion is to give them a quick weigh on a kitchen scale-one serving is 2oz of bread!
