  • Cheddar Cheese

  • Step 1

    Preheat an oven to 425 F. Line a mini muffin pan with liners. Combine the eggs, coconut milk, coconut flour and salt together.

    Whisk together well.

    Fold in the cheddar cheese and fresh thyme.

    Fill each liner ¾ of the way full with batter.

    Bake for 19-20 minutes until puffed and golden on top.

    The hint of thyme was nice, otherwise these are very bland and hard to stomach. Not sure why they're called "cheddar" thyme popovers, as there's so little cheese in them you can't taste it. Won't be making these again.

      I used egg whites and added some bacon and green onion, while omitting the thyme. Worked really nicely and had beautiful, big popovers. I also made them in a regular muffin tin rather than a mini!

        I really liked these! Had no fresh thyme so used fresh basil instead.

          So is it right that there are only two tablespoons of coconut flour? Are these made in the mini muffin cups? Is 5oz each just doesn't seem to make 16 popovers. Is each popover a tablespoon of batter?

                  Not a fan. Tasted too much like coconut. Stuck in my throat when trying to eat them a couple of days later

                      The tyhme Just doesn’t work in these. I think maybe basil would be better.

                        I’m new to the keto club and this was my first meal as I was cooking it smells kind of threw me off and the fact that it had so much egg (not a fan of egg) but boy was I wrong it’s delicious! Loved it
