Unsweetened Vanilla Almond Milk

Chia Seeds
2 ounce
Blackberries Raw
¼ cup
Cacao Nibs

Mix chia seeds, almond milk, and stevia together in a bowl. Microwave the bowl in 45-second intervals until mixture is HOT, stirring in between each time. Make sure to stir very well before you chill the pudding later so all the seeds can rehydrate.Step 2
Spoon the almond pudding in individual cups for serving and top with berries and cacao nibs as desired! Cover the cups or jars with plastic wrap and let them sit in the fridge overnight. The next morning, your pudding will be thick and ready for eating.

I made with almond milk but I added 1 scoop of WPI. I suppose if I didn't it would've been very watery. Perhaps 1/2 almond and 1/2 coconut cream would be ideal. I also added peanut butter. It's nice and refreshing. 4 stars for me .

Compare the carbs of dairy milk to that of plant milks and it will all make sense.

I love chia seed pudding but instead of almond milk I use a can of full fat coconut milk. It makes the pudding a bit thicker than when you use almond milk

Second time making this, this time I warmed up the milk first before adding the seeds & this really helped to speed up the swelling of them, then lots of stirring required to bring it together to thicken up. Great wee speedy breakfast or on hand treat when need something sweet 😁👏

Made this recipe to the letter as never made Chai pudding before, and found that the pudding really thickened after in/out microwave c 5 times for a min at time & stirring really well each time & it’s now set thick before even chilling overnight in fridge! Added flavours, nibs & fruit - looking forward to something different tomw 😋👏

I’ve meal prep 3-4 at a time. 2 1/2 tablespoons Chia seed, 1/2 cup of Califia Toasted coconut & Almond Milk Blend, 2 tsp. Truvia Monk fruit sweetener, 1 tablespoon of Almond slivers and 1 tablespoon of toasted unsweetened coconut flakes. I have never heated anything while prepping. 🤷♀️

I did the 5 -1 minute time stirring in between. That worked perfectly! Next time I’m going to use a bigger bowl so it doesn’t boil over 😉

Mine was runny this morning, so I added another tsp of chia seed to the batch and put back in the frig. I have never had chia pudding; hope it tastes good.

I personally have always loved chia pudding over oatmeal. But I’d highly recommend getting some Jordan’s Skinny Syrups to flavor your chia pudding/oatmeal/coffee/smoothies etc so much tastier than just stevia in my opinion. Chia pudding is sometimes a texture hurdle for people, I never had an issue but some are weird about it. I compare it to rice pudding/tapioca. Enjoy! It’s a yummy base for awesome toppings! (Berries, keto Choc chips, keto granola, nuts)

I think there's double the amount of almond milk in the recipe than required. I added 1 mugs worth and it worked

I don’t have a a microwave. I do this in a pot on the stove on medium and I allow it to boil for about 1 minute is enough. Totally worth it especially if you’re making 2 or 4 servings! I just added crushed macadamia nuts to the top before eating, and it’s was epic! Enjoy!

Great snack food…I add cinnamon, allspice, nutmeg, and a tablespoon of hemp seeds. Teaspoon of cool whip on top. One time added sugar free jello pie filling…banana cream is my favorite.
