Low Carb Baked Cauliflower Mac and Cheese
This ooey, gooey side dish packs in plenty of fat for when you need to round out your keto meal! Small cauliflower florets can emulate macaroni noodles, and they happen to be perfect for soaking up a delicious “adult” cheese sauce. You can garnish with fresh parsley or even chopped bacon bits! The original recipe here makes approx. 2 ½ cups for 3 servings.

Almond Milk, Plain Or Original, Unsweetened

Step 1
Preheat an oven to 350 degrees. In a large pan over low heat, melt the butter. Gently whisk in the almond milk and heavy cream in 3-4 additions.Step 2
Whisk in the pepper. With the liquid at just below a simmer, whisk in the cheddar and first amount of parmesan, again in 3-4 additions. Whisk until all the cheese is melted and you have a smooth liquid.Step 3
Let the pan gently simmer for 2-3 minutes until it thickens. Take the pan off the heat and let the sauce continue to thicken as it reaches room temperature.Step 4
Cut fresh cauliflower florets into small, 1 or 2-bite pieces. You can strip the large florets into smaller florets to emulate the shape of an elbow noodle. Then, toss the cauliflower into the pan of cheese sauce and get all your vegetables coated.Step 5
Press the cauliflower mac and cheese into a small glass baking dish and pour your extra cheese sauce over it. Sprinkle the final amount of parmesan over the top. Bake your dish uncovered for at least 20 minutes. You can go longer for more tender cauliflower, but watch the time so your cheese sauce does not separate in the oven.

This was good, although very rich. I followed the recipe and would title this Cauliflower Cheese Soup. It’s not mac n cheese so why try lmao

Yum! I made it as written and loved it. The next time I make it I am going to see if I can find a Lego friendly way to thicken the sauce. I doubled the sauce and whipped up some macaroni noodles for my kids and added the extra sauce to them. They loved it! It was great to be able to make an extra dish for them so easily.

My second time making this, I parboiled the cauliflower. That made it too soft and it was better with a little crunchiness left. But overall the cheese sauce is delicious. I’ll make it again. OH! Best to bake right after putting together. Don’t wait.

I add a tp of arrowroot and left out 21g of parmesam,I add some muchroom just because they needed using up, it was delicious, I also part boiled the coliflower,

Rich and delicious. I added dry mustard and a few bacon crumbles. I would make again but not very often as it is so rich.

This is one of the best cauliflower cheese dishes I have ever had. The sauce is rich, the flavour of the parmesan 😍 coming through was divine. No additions, subtractions or substitution before you try this exactly as it is, you won't make an iota of change after. Best recipe on carb manager!

Delicious Sauce seemed to be salty but when cauliflower mixed in it was just right. I used Walnut Milk instead of Almond Milk because it is what i had on hand.

I used carb master keto milk instead of almond milk. Also let the butter simmer for 5 minutes while whisk to brown the butter for a carmalized flavor;)

I added sour cream and some mozzarella cheese because I didn't have parmesan or almond milk handy. It turned out delicious.

Great dish. Reduced the liquid and added some cooked ground beef to make a casserole. Then sprinkled some ground pork rinds on the top to give a little crunch.
