Keto Double Chocolate Nut Fat Bombs
These yummy fat bombs combine chocolate and almonds, and then are drizzled with super dark chocolate. This recipe is written without sweetener since there is a small amount in the dark chocolate, but you can add stevia drops to taste or a little erythritol. Since these fat bombs are no bake and egg free, feel free to taste along the way and add sweetener accordingly.

Ingredients
90% Cocoa Supreme Dark Chocolate by Lindt Excellence
40 gram
Cream Cheese
3 ounce
Coconut Oil
3 tablespoon
Almond Butter
2 tablespoon
Almonds
1 tablespoon, chopped

Step 1
Set up a double boiler to melt the chocolate: Heat a pot with 1-2 inches of water in it over medium heat. Place the squares of chocolate in a metal bowl that will fit over the pot and ideally fit slightly inside of it.Step 2
Once the water in the pot starts boiling, reduce the heat so the water is just simmering and place the bowl over the pot. Stir frequently until the chocolate just melts, then set the chocolate aside.Step 3
In a bowl, mix together the cream cheese and almond butter. Mix half of the melted chocolate in another small bowl with the coconut oil until smooth, then pour into the cream cheese mixture and mix until smooth.Step 4
Chop the almonds and add them to the bowl. Add stevia drops or erythritol if you would like additional sweetness. Refrigerate mixture for about 30 minutes.Step 5
Form the mixture into 8 balls and refrigerate for 30 minutes.Step 6
Drizzle the remaining chocolate on top of the balls and refrigerate for another hour before eating.

I modified this recipe to be plant based, but subbed the cream cheese with full fat coconut milk, the coconut oil for a Plant-based ghee (could also use butter), the almond butter for crunchy peanut butter, and the crushed almonds for macadamia nuts. One serving (bomb) is 300 cals, 30g of fat, 5g of protein, and 1 carb (I cut them in half) I have the specific recipe on my page.

So i accidentally poured ALL the chocolate into the mix...so not drizzled on top, but making for a very chocolatey peanut butter ball...i like it this way. Anyone have any idea whether this would change the macro numbers? I mean it's the same amount of ingredients, right?

The bomb! Literally. I used Bakers Unsweetened Chocolate & added Swerve. I am not a big fan of coconut so I used Refined Coconut Oil and there is zero coconut taste.

The chocolate was soooo bitter. I added swerve to the mixture and rolled the balls in coconut shreds instead of drizzling chocolate on top. Delish. Definitely taste it before you roll it.
