Ingredients
Cabbage
2 cup
Bacon
2 slice - 6" long
White Onion
1 tablespoon
Garlic
1 clove
Olive Oil
1 tablespoon
Parmesan Cheese
1 tablespoon, grated
Cheddar Cheese
⅓ cup, grated
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Heat the oil in a skillet over a low/medium heat. Add the bacon and cook until golden brown all over and crisp. Remove from the pan with a slotted spoon and set aside.Step 2
Add the onion and garlic to the pan and sweat gently until tender.Step 3
Roughly slice the cabbage into strips and add to the pan. Toss with the garlic and onion and cook until tender and wilted.Step 4
Season the cabbage to taste and add the Parmesan to the pan, stirring through to melt.Step 5
Scatter the cheddar cheese over the cabbage and let it sit on the heat until it starts to melt.Step 6
Crumble over the cooked bacon to serve.

This was really, surprisingly good! And quick to make. A+ side dish!

It was pretty good. I added an oz of fine sliced ribeye that I had left over and some garlic salt too.
