Ingredients

  • Black Olives

    Black Olives

  • Mayonnaise

  • Capers

  • Scallions

    Scallions

    1 medium - 4 1/8" long

  • Parsley, Fresh

  • Lemon Juice

  • Black Pepper

  • Step 1

    Roughly chop the eggs and add to a mixing bowl.

    Finely chop the capers and scallions and thinly slice the olives. Add to the bowl with the eggs along with the mayonnaise, lemon juice and pepper. Mix well to combine.

    Stir through fresh parsley to serve.

    I didn't have celery for crunch but I used water chestnuts. I love this recipe. I could use chicken instead eggs. This recipe will be used every week!

            I loved this! I couldn’t believe how tasty it was, i love my egg salad but this topped it, lemon juice was perfect! I put mind in a small Romain boat by cutting the head in half and peeling back the loose leaves and removing the heart in the middle. Keep the stalk in tact for strength.

                  So good! I added diced celery because I wanted some crunch to it and sliced cucumbers with white wine vinegar and olive oil as a side for a meal.

                            Try garlic aioli Mayo with avocado oil different you might like that instead. I tried the one from Primal kitchen and also there's one in Stonewall Kitchen

                          Delicious! I left out the capers, added a little salt, and substituted green olives instead of black. Served it up with original flavored pork rinds. So good!
