  • Step 1

    Grate the radish and zucchini in a food processor or using a box grater. Set aside for 10 minutes then squeeze out as much liquid as possible.

    Heat the olive oil in a skillet over a medium heat. Finely slice the scallion and dice the bacon. Add everything to the skillet and stir well to combine.

    Cook for 4-5 minutes until the vegetables are tender and the bacon is cooked, then turn the heat up and cook on high for 3-4 minutes more so that the bacon and hash starts to brown and crisp on the bottom, turning regularly.

    This hash was a pleasant surprise and a much needed break from the primarily eggs and meat breakfasts. Served it with some fresh raspberries...will be doing this on a regular basis.
