  • Cauliflower, Raw

  • Coarse Kosher Salt by Morton

  • Heavy Cream

    Heavy Cream

    ⅓ cup

  • Parmesan Cheese

    Parmesan Cheese

    ¼ cup, grated

  • Step 1

    Preheat an oven to 400 F. Prepare a medium stock pot with water and bring it to a boil. Once water is boiling, add a good pinch of salt to the water and drop the cauliflower in. If you like your veggies to have some texture, cook for 30 seconds, if not add another 30 seconds. Then remove the cauliflower from the water with a slotted spoon making sure to drain all the water off. You can place drained cauliflower on paper towels first before adding them to the baking dish.

    Place cauliflower into a loaf sized baking dish, top with kosher salt. Top with cream and cheese.

    Bake for 10 minutes and then broil for 3-4 until nice and browned.

    This was WONDERFUL! I did add the garlic powder and black pepper as some comments suggested. I didn’t have parm cheese on hand, so I used what I had (shredded cheddar)! This will be a weekly staple in my kitchen!

            Can i use frozen cauliflower? Fresh is SO EXPENSIVE!

              I used frozen! I just cook the frozen first according to the package and then drained. Pick up the recipe from there!

            I’m going to try tonight, has anyone sprinkled a pinch of ground almonds on top? This was done on another recipe "cauliflower bake” if I’m not mistaken, and the topping was delicious!

                My husband and I really enjoyed this and appreciated that it’s lower in carbs than some of the cauliflower casseroles. It was easy to prepare. I sprinkled garlic powder and pepper over the cauliflower before adding the Parmesan cheese which made the flavor a little more complex and brought out the Parmesan cheese. Next time I’ll use a little more garlic powder.

                        About how much of a head is 12 ounces of cauliflower? Is that one whole small head or less than one small head?
