    Preheat your oven to 350F/180 C and prepare a baking sheet with aluminum foil or use a roasting pan. Prep the duck by cutting off the neck and trimming off excess fat from the tail end. Set aside.

    Mix the salt, black pepper, and paprika in a small bowl. Crush the garlic cloves, cut the onion into large wedges, slice the carrot and chop the orange. Season inside the body cavity, then stuff the cavity with thyme, garlic, shallots, carrots, and chopped orange pieces.

    Season the outside skin with the seasoning. Transfer the duck to a roasting pan and place it upside down first. Roast the duck in preheated oven for 1 hour.

    Flip the duck over using kitchen tongs, and roast for another 30 minutes until the internal temperature reaches 160F. In the second hour of baking, baste the bird every 15 minutes with the rendered fat in the pan. Remove the duck from the oven and let it rest for 15 minutes before serving.
