Low Carb Quick and Easy Chorizo Spaghetti

This quick and easy Keto pasta recipe makes a delicious lunch or dinner option - perfect when you are short on time. Our low carb spaghetti is prepared with juicy fresh tomato, smoky Spanish chorizo, a hint of lemon zest, aromatic garlic, fresh basil, and served with zucchini noodles. This simple one-pot dish is perfect for weeknight meal times.

Can I Use Different Noodles?

We have used zucchini noodles for our Keto spaghetti recipe. Zucchini noodles make a great low carb pasta alternative that are both quick to cook and budget-friendly. You can buy the noodles ready prepared from some grocery stores, or you can easily make your own. Simply use a vegetable peeler to peel the flesh of a zucchini into wide ribbons, or spiralize until you reach your desired quantity. You can also use alternative Keto-friendly spaghetti for this dish, such as finely sliced and sautéed cabbage, spaghetti squash, or zero carb miracle noodles. Please be sure to adjust your cooking times and macros accordingly to account for any changes made to the original recipe.

Are Tomatoes Keto?

Tomatoes are a part of the nightshade vegetable family, along with potatoes, eggplant, bell peppers, and pepper-based spices. With the exception of potatoes, nightshade vegetables may be included in moderation as part of a healthy and balanced Keto diet. We have used one medium tomato for this dish but feel free to use less if you wish to reduce the carb count further.

    Roughly dice the chorizo into bite-sized chunks. Heat the olive oil in a skillet over a medium/high heat. Add the diced chorizo. Cook the chorizo for a few minutes until golden and releasing its oils.

    Crush the garlic and roughly chop the tomato. Add the garlic, lemon zest, and tomato to the skillet. Stir well to combine. Cook through for a few minutes more, softening the tomato in the chorizo oil.

    Roughly chop the fresh basil. Add the zucchini noodles to the skillet. Stir well, coating the noodles in the sauce and flavorings. Cook the zucchini for just a few minutes until hot and just tender. Do not overcook, or the zucchini will become mushy. Stir through the chopped fresh basil. Serve hot.
