Keto Vegan Strawberry Fat Bomb Bites

These vegan strawberry fat bombs are made with fresh strawberries, coconut milk, coconut oil and a dash of lakanto maple flavored syrup.

Once the fat bomb mixture is prepared it is poured into ice cube trays. Once set they provide instant bite sized snacking treats straight from the fridge!

Ingredients

  • Strawberries

    Strawberries

  • Maple Flavored Syrup by Lakanto

  • Vanilla Extract

    Vanilla Extract

    1 teaspoon

  • Canned Coconut Milk

    Canned Coconut Milk

    ½ cup

  • Coconut Oil

    Coconut Oil

  • Step 1

    Set the coconut oil to one side to come to room temperature.
  • Step 2

    Add the strawberries to a food processor and blend briefly to a course liquid.

    Add the softened coconut oil, the coconut milk (top creamy part from the can), syrup and vanilla to a mixing bowl. Whisk together until smooth and creamy.

    Add the strawberries and stir into the mixture to combine.

    Divide the mixture between 18 ice cube tray squares.

  • Step 6

    Freeze for 1-2 hours until set.

      Can you use coconut cream rather than separate the cream from the coconut milk?

        These really need something! They basically just taste like frozen oil. Possibly an extract would help
