  • Olive Oil

  • Cauliflower Rice

    Cauliflower Rice

    2 cup, cut pieces

  • Salt


    0.25 teaspoon

  • Black Pepper

  • Garlic Powder

    Garlic Powder

  • Italian Seasoning

    Italian Seasoning

    1 teaspoon

  • Cheddar Cheese

    Cheddar Cheese

    ½ cup, shredded

  • Step 1

    Have the cooked chicken prepared by shredding it. You can leave the chicken a little chunky if your prefer. Set this aside.

    In a skillet, heat the oil on a medium-high heat. Toss in the cauliflower rice. Cook until the rice is golden brown with just a little crisp to it.

    Toss in the chicken and all the seasonings. Cook until all the ingredients are heated through and coated in the seasoning.

    Turn the heat down low, and sprinkle the cheese over the top of the skillet. You can place a lid on to help the cheese melt for about 30-60 seconds.

    Divide the cheesy chicken rice in half and serve!

    I really enjoyed this mixed with Keto Buttery Broccoli with Bacon. I made a cheesy rice broccoli bowl. Even my husband, who normally doesn’t care for cauliflower, scarfed it down.

      I added a little broccoli and did gel velvita cheese and it was sooo yummy

                This is so good. I used it as a main dish rather than a side. My two year old nephew loved it. Even though he kept saying he didn’t and yuck while shoveling as much as he could into his mouth.

                    It is just cauliflower but chopped up into tiny bits. You can do it yourself or find bags of it already chopped / "riced" for you at the grocery store. At Walmart i found both non-frozen and frozen variety. :)

                  is the cauliflower rice pre cooked before putting it in a skillet to brown it?

                    Hi! I just tried this last night and it is AMAZING! The cauli-rice I used was Not pre-cooked before I put it in the skillet. I just put a lid on the pan and turned on medium high heat and stirred every few minutes until I was happy with the amount of browning. :) hope it works out for you!
