Recipe Steps

  • Step 1

    Whisk all the dry ingredients together.
    Step 1

    Add in the wet ingredients and whisk until combined.
    Step 2

    Heat a large nonstick saute pan over medium-high heat. Add in 2 teaspoons of avocado oil and spread it evenly in the pan by tilting it. Using a 1 oz cookie scoop, scoop 3-4 pancakes into the pan. Turn the heat down slightly. Cook on the first side until puffed and bubbles are starting to form on top, about 2-3 minutes. Flip and continue to cook on the other side for 1-2 minutes or until the pancakes are cooked through.

    Repeat with the remaining batter, adding 2 teaspoons of avocado oil to the hot pan before more batter is added. Serve hot with butter and sugar-free syrup on top.

    I added nutmeg and ginger for more flavour. The oil is not suppose to go in the batter (step 3), it’s for cooking the pancakes in but I added a couple tablespoons to thin it out. Still lacking a bit in flavour but not terrible. I’m going to use the rest for little pancakes to go.

    even if you make them small they don't flip and they tasted okay. Would skip this if it ever came up on a meal plan again

      Pretty good. Make them the recommended size because they won't flip over very well if too big. I ate 2 with 1/2 cup plain Mediterranean yoghurt and Walden farm pacake syrup. Really filling. Also the yield was 12 pancakes not 16

          It said 10 tsp of avocado oil total, so I put 6 tsp in my batter and used the other 4 in my pan to cook them in. Not bad.

            There is no way you’re supposed to add the oil to the recipe. If you do it’s too watered down to need a scoop. Also you have to really turn down the heat if you don’t want to wake the house with the smoke detectors.

              I tried it for the first time, didn’t know what to expect since it was my first time doing low carbs pancakes, but I liked it and will try it again. Even my husband like it.👍🏽

                Really good! I couldn't eat 6. They are so filling! Because of the comment re: overpowering almond taste, I did half almond milk and half coconut milk. Then 1/8 c more coconut flower and 1/8 c less almond flour. Think I may try adding allspice and nutmeg next time.

                    These are not bad but serving size=1 pancake? I thought keto wasn’t supposed to be a starvation diet. By the time you eat enough to be satisfied, maybe about 5 since they’re tiny, you go way over your macros.

                    Not sure where I went wrong but the almond flour was so overpowering to the rest of the ingredients that I ended up taking one bite, spurring that out and tossing the rest of the batter. I wanted to like this so bad, because I LOVE pumpkin flavored things but I will definitely not make this again.

                      Okay so I misunderstood the avocado oil- thought it was for the pan- so left it out. I had just cooked bacon and was going to use the same pan. It was fine without any oil, though now I messed up my fat macros!

                        I double and triple checked the ingredients and can’t see what went wrong. All I know is that it was horrible.
