  • Step 1

    Add the eggs to a mixing bowl, season to taste and beat together.

    Melt the butter in a saucepan and add the egg. Leave to settle for a moment and start cooking then use a spoon to scramble. Cook to preference.

    Slice one large avocado in half and remove the stone. Divide the scrambled egg between the two avocado halves.

    Crumble over the pork rinds to serve.

    This was good. Have made similar eggs & avocado but never thought of adding the pork rinds which was very good. Also seasoned the avocado & eggs with a bit of Moroccan Harissa was very good flavor.

      Love all the ingredients but doesn't seem to work on the same plate.

        Cut a small slice off the bottom of the Avocado so it has a flat bottom. Just add the slice to the eggs.
