Keto Lettuce and Cabbage Slaw with Bacon
This simple but tasty slaw is loaded with crunchy cabbage, crisp lettuce, salty bacon and aromatic chives.

Ingredients
Bacon
4 slice - 6" long
Chives, Raw
2 teaspoon, cut pieces
Lemon Juice
2 teaspoon
Mayonnaise
1-½ tablespoon
Olive Oil
1 tablespoon
Cabbage
½ cup
Iceberg Lettuce
½ cup
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Heat the olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the pan, cooking until crisp and golden. Set aside to cool completely.Step 2
Whilst the bacon cools, thinly slice the lettuce and cabbage and add to a mixing bowl.Step 3
Add the bacon to the bowl with the cabbage and lettuce.Step 4
Finely chop the chives and add them to a small mixing bowl with the mayonnaise, lemon juice, salt and pepper. Stir well to combine.Step 5
Spoon the mayonnaise over the bacon and vegetables and stir well to combine, coating everything in the dressing. Keep refrigerated until ready to serve.

Quite tasty, hard to believe it's only one net carb, I felt guilty eating it the whole time. Very yum, though!

I can’t figure out how many servings it makes. It looks like four but that would only be a half cup or so per serving. What do you think?
