  • Step 1

    Mince 3 garlic cloves and heat them in the bottom of a large soup pot with the olive oil. Cook over low heat until the garlic become fragrant and slightly golden.

    Pour the vegetable broth into the pot, and bring the soup to a boil. Once boiling, add in the zucchini. You may want to chop the zucchini for easier mixing in the next step.

    Cook the zucchini in the soup for about 8 minutes or until the zucchini is soft enough to easily break apart with a spoon. Then, remove the soup from the heat and use an immersion blender to blend the soup into a smooth, silky, bright green broth.

    Return the pot of soup to a low simmer and stir in the salt and pepper. You can simmer openly for 2-3 minutes to thicken the soup even more, if you wish. For garnishing, you can add more pepper, parmesan cheese, or fresh parsley at your discretion.

    I added garlic and onion granules, a splash of cream and Parmesan cheese. Gorgeous!

      Could benefit from some onion. Flavor was a little disappointing and I love zucchini.

        Felt like it was lacking flavor, so added Parmesan cheese and it was still lacking flavor. Added ginger based on an earlier recommendation and the ginger really made the flavor pop! Thanks for the recommendation!
