Keto Cobb Salad On A Stick

Very few people would pass up a cobb salad! A full cobb may not necessarily meet your keto requirements, but a perfectly sized snack portion can really hit the spot. Four large skewers are stacked with crisp lettuce, crispy turkey bacon, hard boiled eggs, and some crunchy veggies. A sprinkle of blue cheese ties it all together. Enjoy the ingredients as finger foods, or you can push the ingredients off a skewer into a bowl to enjoy as a small traditional cobb salad.

    Begin by preparing all your ingredients. Chop the cucumber and lettuce. Cut each hard boiled egg into 4 pieces (8 total), and chop each piece of bacon into 4 pieces (16 total).

    In any order you like, arrange the ingredients on 4 skewers. Each skewer should have 1 oz of cucumber, 2 grape tomatoes, ½ oz of lettuce, ½ of an egg, and the the equivalent of 1 piece of bacon.

    For serving, lay the skewers on a platter. Crumble the blue cheese over the skewers. Due to the moisture content of the blue cheese, it should naturally stick to the skewers for just a hint of flavor in each bite.

    I am not sure what 4+skwers mean. Does this feed 4 people.... 1 skewer per person?

      You are looking at "Yield: - 4 + skewers". This means one recipe makes 4 skewers, and you can click the - and + buttons to change the amount of skewers you want to make. The serving size is listed directly under the pie chart of macros. In this case, 1 skewer is 1 serving.

      Unfortunately, users cannot make direct edits to the recipes. However, a healthy cheese substitute that doesn't negatively affect the macros would be feta. Hope this helps!
