This snack could not be easier! Similar to our popular keto egg cups, these just-muffin-tops are like a very light breakfast or a snack that tastes like a mini-omelette. You could easily double up on the serving size for a more filling recipe.

    2 large slice - 6 1/4" x 4" x 1/16" - each 1 ounce

  • Cheddar Cheese, Natural

    3 tablespoon, shredded

  • Raw Egg

  • Whipping Cream, Extra Heavy/gourmet, Not Whipped

  • Salt

    ⅛ teaspoon

  • Black Pepper, Ground

    Black Pepper, Ground

    ⅛ teaspoon

  • Onion Powder

  • Step 1

    Preheat and oven to 350 degrees and spray a 6-ct muffin tin with pan spray. Finely dice the ham and distribute it in the bottoms of the muffin tins. Follow with ½ TB of shredded cheddar per muffin tin.

    Whisk together the egg with remaining ingredients. Pour evenly into each muffin tin, filling each one about halfway.

    Bake the tray for 13-15 minutes, until the eggs have set. Allow to cool slightly before removing from the muffin tins. The egg may rise during baking, but it will sink down to “muffin top” size while cooling.

      I used 1oz. each of chorizo and ground beef instead of ham and it turned out delicious with some sour cream on the side.

          I’m a little confused when so many of these delicious recipes call for 1/2 Tbl or 1 Tbl of cheese. In the pictures, it sure looks like more cheese than 1/2 Tbl (which is only 1.5 teaspoons) in the bottom of each cup. Thoughts?

            I agree with caron. If this is an effort to save calories, it's not for a keto dieter (me, in particular!). I like a big breakfast! I've lost 51 pounds just counting carbs.

            Nothing wrong with a little extra unless your protein intake is that low.

            You’ll be pleasantly surprised. It doesn’t take much cheese and the egg mixture fills the cup. Have made these a few times and very tasty!

          These are really good. I accidentally included some chopped up broccoli (was getting the recipe confused with another) but turned out great! I will make these guys again!

            The serving size is really “3/4 of one muffin top”?!? Okkkk....brb, going to portion out individual servings from each individual muffin top! :D

            Ditch the salt & use prosciutto. I find them best freshly baked. For a single serving - save energy by cooking 1 or 2 in a countertop appliance. The "batter" held up well tightly sealed in the fridge for 3 days

                I added 10g of chopped red onion. That adds 0.8 to whole recipes - then into 6 muffins - 0.1 to each muffin
