Keto Avo Lime Mayo Dressing

This tangy avo-lime mayo is simple to throw together yet brings a whole new flavour to your classic mayonnaise.

Perfect as a salad dressing, for egg salads, fajita topping or simply for dipping low carb veggies in to!

The recipe requires a keto friendly store bought mayo, but you can replace this with your own homemade mayo if you prefer.

Ingredients

  • Cilantro

    Cilantro

    1 tablespoon

  • Mayonnaise

    Mayonnaise

    ½ cup

  • Avocado

    Avocado

    ½ avocado, California

  • Salt

    Salt

    ⅛ teaspoon

  • Black Pepper

    Black Pepper

    ⅛ tsp

  • Lime

    Lime

    ¼ fruit

Recipe Steps

  • Step 1

    Peel and de-stone the avocado and add to a food processor along with the mayonnaise. Season to taste and blend until smooth.

    Pick the cilantro leaves and add them to the food processor along with 2 teaspoons of the lime juice and a teaspoon of the lime zest.

    Pulse to combine until the dressing is smooth and creamy.

    Refrigerate for 10 minutes before serving.

        This recipe has 1/2 c Mayo = 8 T plus 1/2 avocado = about 7 T. plus 1 T other ingredients. Total Tablespoons for the recipe is about 16 T….. 16 T = 1 cup. It says the recipe makes 4 servings, so each serving is 1/4 cup, or 4 T

        I think if it was covered well it should be ok in the fridge for up to 24 hours, but ideally the sooner the better!
