The amount of dairy is significantly reduced in this recipe, and the thickening agent is substituted with the wonder veggie: cauliflower!   • Cauliflower

  • Step 1

    In a medium pot, place in chopped cauliflower and fill the pot with water. Bring the water to a boil, and cook the cauliflower until it is very tender. It should be soft enough to break apart easily.

    Drain the waiter from the pot, and either use an immersion blender to blend the cauliflower or use a food processor. Add in the heavy cream, and blend the cauliflower until it resembles mashed potatoes. Set this aside for later.

    Chop the bacon into rough pieces, and place them in a new, large pot. Cook the bacon over high heat until the bacon is cooked through and slightly crispy.

    Chop the asparagus and spinach, and stir these into the pot. Cover the soup pot, and let the veggies and bacon cook together on medium-low heat until the vegetables are soft.

    Stir the pepper in with the veggies and bacon. Pour in the canned chopped clams with all their juices. Pour in the chicken stock as well. Stir the ingredients together, and bring the soup to a strong simmer.

    Gently stir the creamy cauliflower into the soup. Stir in the salt, celery seed, and tobasco as well. Allow the soup to cook down slightly and thicken - about 5 minutes. Enjoy steamy hot!

    This is the recipe I used before Keto. https://reluctantentertainer.com/best-clam-chowder/ And I feel that so much flavor is left out of this recipe that would not add to the carb count! Add a tablespoon of butter! A teaspoon of onion powder, half a teaspoon of pepper. Original recipe uses chopped celery for chewing value, which satisfied that chew need better than obligatory keto soup spinach. Rather than adding two cup of chick broth, what if we just add the bouillon without the water? We get a thicker, more flavorful broth.

      I make this a lot my husband loves it. I had 1/4 cup diced green onion and 1/2 cup celery always turns out great. Don’t leave out the spinach or asparagus can’t really taste them but sure adds to the flavor

        Great recipe! I made this using Trader Joe's Seafood blend (found in their freezer section) because I couldn't find canned clams. The flavors were still there. I will make this again. Hopefully, with clams the next time.

          Made this last night. Like another reviewer said, I thought I'd have to wait until after keto to enjoy clam chowder. This recipe exceeded my expectations. It's very tasty and one of the best keto recipes I've found to date. The only change I made was doubling the cans of clams. I might triple it next time. If you like clam chowder, Make. This. Recipe.

              And then added dill. I only used butter, heavy cream, cream cheese, onion, garlic powder, salt and pepper, clams drained with some liquid. Delicious.

              Oh my god.. I’m shook at how delicious this is! You don’t even taste the cauliflower and despite not being a super thick soup, it’s really filling! I’m so happy right now. I thought I had to wait until I’m done keto to have clam chowder again but I don’t even think I’d go back to the regular recipe after this! I had no spinach so I used broccoli rabe instead and it was absolutely divine.

                Loved this added 1/2 cup diced green onion and 1/2 cup diced celery ! Everything else the same. My husband said he could eat this every day. I also used Trader Joe’s frozen cauliflower rice. Thinking of cutting up the veg and freezing them together so I can speed up the cooking process 😉

                  Used 1 stalk of celery,1/2 grated small onion,and replaced the raw califlower head with 12 oz of frozen califlower rice, and left out spinach and asparagus out of personal preference. Replaced the chicken stock with seafood stock which greatly improved the flavor.

                    Loved this, I added doubled the cauliflower, used only 1/4c of cream and used 10oz of clams. Delicious!!

                      Thoroughly enjoyed this chowder. I did change the stock to a fish stock and the flavor was amazing... Definitely will make again!!!

                          It wasn’t creamy but still great I did double the recipe though so maybe that had something to do with it.

                            Hi sounds great. If you want to up the creaminess you need some sort of a binder. Try 1/2 teaspoon Xanthan gum. I put it in my smothered pork chops in cream sauce, and it works like a charm. It provides a structure. Don’t dump it in, sprinkle it in and stir.. let it simmer and stand for a few minutes. it’ll thicken up. It has less than 1 carb per 1/4 tsp.

                          It wasn’t very creamy for me, maybe I just didn’t use enough cauliflower. My husband and I still loved the flavor of it! Definitely a keeper!

                              Ingredient List says to use chicken broth but the instructions says chicken stock. Wondering which is best for this recipe? (I’m not much of a cook. ;)
