  • Step 1

    Preheat an oven to 350 degrees. Slice your chicken breast(s) into thin slices. Place a piece of plastic wrap over the chicken and pound them to a ¼” thickness.

    Pat each piece of chicken dry with a paper towel.Sprinkle the salt, pepper, and cayenne over the chicken.

    To make the breading, pulse together the pork rinds, parmesan, paprika, and onion powder until you have a fine breading.

    Spread the breading on a large plate and whisk together an egg in a bowl. Have this ready to go with you seasoned chicken.

    Dip each piece of chicken one by one in the egg, shake off the excess liquid, then press into the breading. Press the breading on the chicken so it’s entirely covered before setting on a sheet tray lined with parchment paper.

    Bake the tray for 30 minutes, flip the chicken over, and bake for an additional 10-15 minutes until done and crispy.

    One piece is over 400 calories? Something is not write. I love this app but I also hate it for the one reason that recipes just don't seem to correlate with late with the calories or carbs ect....

            Instead of oven baked I pan fried it and it came out just as crispy as oven baked! I love this recipe because it tastes almost like the Panko bread crumb chicken we used to make only without the carbs!

                  On reflection I think I should have ground down the rind much finer so I didn’t use so much. My fam found it too fatty and salty and we had to add sour cream to tone down. Will try again!

                          Cook the breasts in the air fryer for 5-7 minutes at 400 degrees, then flip the breasts over and cook for an additional 5-7 minutes.

                        This is fantastic. I pan fried it in ghee to make more of a schnitzel. Thoroughly enjoyed even by my 5 yo and 2 yo.

                            Good flavor but only top crisped up. When I turned the chicken the bottom side did not crisp up. Still very good though!

                                  I love it! But any tips on how to avoid it sticking to the parchment paper? I tried oiling it and flipping more often but still it is really hard to turn over without ripping the meat apart and the “breading” off.

                                    If your breading is sticking to the parchment you may have too much egg on your chicken or haven't baked for long enough.

                                    Bake it on a rack on top of the baking pan and spray the rack with approve oil.
