  • Step 1

    Preheat the oven to 360 degrees Fahrenheit and lightly oil 8 muffin cups.
  • Step 2

    Dice the mushrooms into bite sized chunks. Heat the oil in a skillet over a low/medium heat and add the mushrooms. Cook for 7-8 minutes until tender and set aside to cool.

    Whilst the mushrooms are cooling, finely chop the chives and add to a mixing bowl along with the eggs, grated cheese, salt and pepper. Beat well to combine.

    Add the cooled mushrooms to the bowl and stir well to combine.

    Divide the mixture evenly between the 8 greased muffin cups and bake for 18 minutes or until cooked through and golden brown on top.
