Low Carb Hot Coconut Breakfast Porridge

234 ratings

This unique Keto breakfast recipe puts a twist on porridge. If you’ve never had porridge before, think of it as a mix between oatmeal and thick pudding. It’s a hot breakfast that will really fill you up. Despite some ingredient changes to make porridge more Keto-friendly, you’ll find comfort in a hot, thick, hearty meal. Porridge is particularly great to have on especially cold mornings, but there are many other good times to eat porridge. If you exercise while on the Keto diet, this easy porridge recipe is great for eating beforehand. The low carbs will give your body some easy calories to burn. Any breakfast, really, will be better with this recipe!

What is porridge?

Oatmeal, grits, porridge, hot cereal: there are all types of thick, hot breakfast dishes that all seem so similar. Porridge is traditionally made with ground oats or rice. It’s the addition of milk or hot water that turns it into the creamy mixture that is porridge. For your Keto porridge recipe, you’ll be making it with ground flax seeds and coconut flour.

Porridge toppings

This recipe is topped with coconut milk and blueberries. For a more savory topping, try drizzling cashew cream or sprinkling sliced almonds over the top. If you really like coconut, unsweetened coconut flakes also make a scrumptious porridge topping.

I don’t like coconut

You can substitute coconut flour in this recipe with almond flour. Skip the coconut milk, and stir warm almond milk into your porridge instead! Add any other toppings that you’d like at your discretion.

I made this in the microwave and it was still good, although a little soupy. Not sure if it would be thicker on the stovetop but I’m not going to dirty a sauce pan for one serving lol! I think all I need to do is reduce the water and it will be perfect.

I’m really trying but struggling to eat this with little flavor and terrible texture. Any ideas.

It happens the same to me 😖 texture too liquid and the idea of adding raw eggs off the heat got me scared of salmonella 😅. Ended up in the trash.🙁

Add a pinch of real salt, cinnamon, and a dash of vanilla extract. It seems like a very bland recipe.

Tasty and filling. Enjoyed it with redcurrantsand blackberries instead of blueberries. Love the taste of the butter in it

This was absolutely delicious. I added a drizzle of Stevia, and a drizzle of sugar-free pancake syrup. Love this recipe.

Almond flour doesn’t absorb water like coconut flour does- but oat FIBER (not flour!) does. It also lends the flavor of oats. I’m not a fan of coconut flour, and oat fiber has become my go-to substitute for it in keto recipes. It worked well in this one and made a nice porridge consistency. I also substituted heavy whipping cream for the coconut milk.

Is oat fiber the same as oat bran?

I used blackberries, whipping cream and monk fruit sweetener in place of blueberries and coconut milk. Added a scoop of protein powder. Very tasty

Did the protein powder make it thicker? If so did you add more water or milk?

Ive made this for years the egg just adds fat and protein you can omit it and it will still hold solid like a porridge. No need to "replace" it.

I added a squirt of Stur Blue & Black Berry, subbed heavy cream for the coconut milk, and used 10g of dried blueberries. Pushed the carbs up to 12 or so but I liked it so much that I’m willing to look for zero-carb foods for lunch and dinner!

Did not like the flavor of this at all. It tasted so salty and even after adding swerve brown sugar it wasn’t edible for me or my family.
