Keto Beef Chili Cheese Lettuce Cups
These simple yet delicious lettuce cups are loaded with spiced chilli beef and topped with a sprinkling of tangy cheddar cheese.
These are a great lunch served hot, or you could prepare the beef in advance and add cold to lunch box salads.

Ground Beef
½ pound
Olive Oil
1 tablespoon
Green Bell Pepper
¼ medium - 2 1/2" diameter x 2 3/4"
Beef Broth, Bouillon Or Consomme, Homemade
½ cup
Tomato Puree
2 teaspoon
Chili Powder
1 teaspoon
Gourmet Collection Smoked Paprika by Mccormick
½ tsp
Garlic Powder
0.5 teaspoon
Onion Powder
0.5 teaspoon
Cumin, Ground
0.5 teaspoon
Oregano, Dried
1 teaspoon
Cheddar Cheese
¼ cup, grated
Lettuce, Romaine Or Cos
4 innerleaf
Salt, Sea Salt

Black Pepper

Recipe Steps

Step 1
Heat a tablespoon of olive oil in a large pan over a medium/high heat. Add the beef and cook until browned all over.Step 2
Finely dice the pepper and add to the pan with the beef along with all the spices, seasonings and tomato puree. Stir well to combine.Step 3
Add the beef stock to the pan and simmer for 15 minutes until all the liquid has been absorbed.Step 4
To serve, divide the chili between the four lettuce cups and scatter over the grated cheese.

It would be very helpful in ground beef recipes if recipe writers would provide the lean/fat ratio of the beef. Or is it the case (hardly imaginable!) that the macros are not any different for, say, 80/20 beef vs 90/10? Thank you 😊

As far as I know you shouldn’t heat olive oil very hot ...

EVOO shouldn't be heated to smoking. Regular olive oil, or a combination oil like Avocado/olive can be heated.

How many lettuce cups are considered as a serving? This recipe sounds good. Wanting to try it. Can you also salt the lettuce before you put the filling in it?

Hi, that is correct - the recipe serves 2 leaves per person. Yes you can salt the lettuce if you wished to. Hope this helps.

I would say 2. The recipe calls for a total of 4 leaves and there are 2 servings. (Not sure about the salt, though.)
