Step 1
To prepare the chicken breasts, cut them into strips for easy cooking. Heat the olive oil in a pan and place in the chicken strips. Sprinkle the salt, pepper, oregano, and thyme evenly over the meat. Cook the chicken for 3-4 minutes per side, or until it’s cooked through.Step 2
Set the cooked chicken aside to cool. Then, cut it into small slices or cubes. Leave this set aside for later.Step 3
To make the Tzatziki sauce, combine the greek yogurt, olive oil, lemon juice, salt, pepper, garlic, and dill in a bowl with a whisk. Peel and dice the cucumber into very fine pieces, and fold this into the sauce.Step 4
Toss the chicken and Tzatziki sauce together, or you can leave these separate and top your final bowl with a serving of sauce.Step 5
To prepare the bowl, fill two bowls with cauliflower rice. Distribute the chicken and sauce evenly over the rice. Top each bowl with chopped olives and additional dill at your discretion. Enjoy!

So delicious even my non-keto fiancé loved it. I substituted in keto rice for the cauliflower and then mixed it all up. The tzatziki was the winner!

Another knockout. What I especially like is that the sauce and the grilled chicken lend themselves to so many other substitutions. Definitely a keeper.

I had leftover Moroccan grilled chicken so lots of flavor and I cooked my cauliflower too it was good.

Yum! I cooked the cauliflower rice a bit instead if using it raw. Very fresh flavors.
