What other types of cheese can I use instead of Cheddar?

If you're not a fan of Cheddar, you can replace it with Provolone or Swiss cheese. Another great option would also be Monterey Jack.

What if my bacon starts to brown too fast?

If your bacon is browning too fast, feel free to cover the meatloaf with a piece of aluminum foil. Remove the foil a few minutes before you take the meatloaf out.

    Finely dice the onion and garlic. Grease a frying pan with olive oil and heat up over medium heat. Add the onions, garlic, and cayenne pepper. Cook for 3-4 minutes, stirring constantly. Remove from the heat.

    In a large bowl, add the ground beef, shredded cheddar, almond flour, grated Parmesan, eggs, parsley, soy sauce, dried oregano, dried thyme, dried rosemary, salt, pepper, and the onion mixture. Mix well to combine, making sure to distribute the shredded cheddar evenly. Optionally, you can add some more herbs or spices at this point.

    Divide the mixture between 4 aluminum pans that fit your air fryer basket. Top each meatloaf with sliced bacon (two bacon slices per meatloaf). You can also use a regular mini loaf pan as long as they fit your air fryer basket. The baking time will be the same.

    Preheat the air fryer to 350°F/175°C. Put the meatloaf in the air fryer basket and cook for 20-25 minutes. Repeat with the remaining meatloaves.

    When done, remove from the air fryer and cool for 10-15 minutes before removing from the pan. Garnish with some chopped parsley and optionally serve with shredded cheddar. Slice and serve immediately.

            Great recipe, but I'm a little confused. Recipe it is for 8 servings but each serving is listed as 7.8 oz. How can this be? When weighing out then that results in only 4 servings. Therefore the recipe has an error somewhere. I'll make these 8 servings but not sure my numbers will be accurate
