These simple yet tasty halloumi kebabs are oven grilled but would also make a great addition to the summer BBQ.

Halloumi Cheese by Pallas

Step 1
Add 4 wooden skewers to a large dish and cover with water to soak.Step 2
Slice the zucchini into discs about 1 cm thick (you need 12 discs), and add to a large mixing bowl with the cherry tomatoes. Dice the halloumi into chunks about 1 inch long (you need 8 pieces) and add to the bowl. Season with salt and pepper.Step 3
Finely chop the mint and the oregano and add to the bowl.Step 4
Add the lemon juice, olive oil and crushed garlic. Mix together well with your hands to ensure the vegetables and cheese are evenly covered in the marinade.Step 5
Cover the bowl and transfer to the fridge to marinade for 20 minutes.Step 6
Remove the marinated mixture from the fridge and thread the vegetables onto the kebab skewers, Each skewer should have 3 discs of zucchini, 2 cherry tomatoes and 2 cubes of halloumi.Step 7
Heat a grill to medium and arrange the skewers side by side over a grill tray.Step 8
Place under the grill to cook for 8-10 minutes or until the zucchini is tender and the cheese is starting to slightly soften and turn golden.
