  • Heavy Cream

  • Parmesan Cheese

    ½ cup, shredded

  • Step 1

    In a medium-sized pot, combine the butter, kale, and spinach over medium heat. Let the butter melt and have the vegetables cook down until they are heavily wilted.

    Season the ingredients with the salt and pepper, and pour in the chicken broth. Bring the broth to a strong simmer, with the lid on.

    Stir in the heavy cream. Remove the pot from the stove, and use either an emulsion blender or a food processor to blend the soup into a consistent, creamy mixture. Return the pot to medium heat.

    Allow the soup to simmer for a few minutes so it reduces slightly. Then, stir in the parmesan cheese. Stir until the cheese is completely melted.

    Wow. One bowl of this would blow my fat content for the day out of the water! Not to mention the k count. Something is wrong with the calcs. Might be fine for someone without cholesterol issues but not for me.

              The nutrient calculations are wrong. As written, 1-1/2 C = 5.1 Net Carbs and 431 Calories. I submitted a food error report, but this is mostly an issue with the number of servings. First of all, you say 2 servings of “1 1/2 C” each. Well that’s just the Chicken broth alone (3 C). The actual recipe will make a total volume of just about 5 cups, if not a bit more. So a 1-1/2 C serving is 1/3 of the total nutrients, not 1/2 as published. I copied the recipe and set servings to 3 to get my numbers. Four servings would be 1 1/4 C and that is still a good amount, and even better numbers at 3.8 net Carbs and only 320 calories.

              I'm currently overseas and I had to substitute the kale for collards. The soup still tasted amazing! My whole family enjoyed it.

                I LOVE THIS. I Sauted red onion, garlic and sausage and then added double kale and spinach. Also added bouillon to broth

                  This was absolutely delicious! My only regret is having a second bowl because a) it was a bit to rich and b) I didn't check the calories until afterwards!

                      I was so surprised that I liked this. I don’t love kale... but this was great! The kale and spinach shrank down so much that it just lightly colored the soup green. Great way to sneak my veggies into chicken broth and cream mmmm

                          First time making this & I’ll give it 3 stars because it was easy to make but it’s quite bland. I ended up adding rubbed sage & dill weed to give it some personality which really helped. Hubby suggested cooking a ham bone or sausage with it so we’re going to try that with what we have left (we doubled the recipe for food prepping/freezing) & I think that’ll definitely bring it to life.

                          Delicious recipe especially on a cold day, have it hot & steamy! I initially suated some red onions, chopped garlic & chorizo slices before adding the spinach & kale but other that followed the recipe. This is easily the tastiest homemade soup I've ever had.
