Keto Instant Pot BBQ Pulled Pork

This easy Keto instant pot pulled pork is coated with BBQ seasonings and a low carb BBQ sauce. The pork is briefly sautéed in the instant pot before pressure cooking until soft and tender. This tasty pulled pork makes a great low carb lunch or dinner option; perfect served with cauliflower rice or in lettuce cups.

Can I Use a Crockpot?

We have prepared our BBQ pulled pork in the instant pot to give you perfect melt in the mouth meat without the time it takes to slow cook. However, if you do not have an instant pot, you may cook the pork in a crockpot. Simply add all ingredients to your crockpot and cook on high for 6 hours or until the meat shreds easily with a fork. Please be sure to adjust your macros for any changes made to the original recipe.

    Slice the pork butt in half into two even-sized pieces. Rub the pork pieces all over with half the paprika, half the cumin, half the salt, half the garlic powder, half the onion powder, half the chili powder, and a pinch of black pepper. Make sure the seasonings are rubbed into both sides of the pork.

    Add the olive oil to the instant pot. Set to sauté and let the oil heat up. Add the pork pieces and brown on each side. You will need to do this one piece at a time. Remove the browned pork from the instant pot and set to one side. Cancel the sauté function.

    While the pork is browning, you can prepare the BBQ sauce. Add the tomato sauce, balsamic vinegar, maple-flavored syrup, remaining herbs, spices, salt and pepper to a mixing bowl. Stir well to combine. Feel free to adjust the quantities of the spices to suit your personal taste.

    Add the stock to the instant pot along with the BBQ sauce. Stir well to combine. You may use an alternative stock if you prefer, such as vegetable stock or a homemade bone broth.

    Return the pork pieces to the instant pot with the stock and sauce. Place the lid securely on the instant pot, ensuring the vent is set to sealing. Select high pressure and set the timer for 60 minutes. Once the cooking is complete, allow to sit and let the pressure naturally release for 20 minutes.

    When it is safe to do so, open the lid of the instant pot. Remove the pork from the instant pot and transfer to a clean board or plate. Use two forks to shred the meat into bite-sized chunks. It should fall apart easily. Serve with some of the pan juices and your preferred Keto sides.

    Way to over cooked. Was so dry I could barely swallow it. Will try perhaps 40 cook time, 10 release, next time.
