Keto Fathead Dough
Fathead Dough is quite an interesting name, but it’s certainly fitting! If cauliflower crust pizza has lost its appeal to you, then this will be your new favorite recipe. Fathead Dough has zero veggies in it and relies on multiple dairy products. Use it for pizza dough, stuff the dough with your favorite fillings, or bake square pieces to use as bread!
For the easiest use with Fathead Dough, always roll or flatten the dough between two pieces of wax paper. You can lightly spray your hands with non-stick pan spray to avoid the dough from coming apart in your hands. Also, keep any dough you’re not using in the refrigerator. Warm dough will not be a fun time.

Almond Flour by Bob's Red Mill
⅔ cup
Baking Powder by Mccormick
1 tablespoon
Salt
½ teaspoon
Spices Oregano Dried
½ tsp, ground
Mozzarella Cheese
1-½ cup, shredded
Cream Cheese
4 ounce
Egg

Step 1
Combine the almond flour, baking powder, salt, and oregano together in a bowl. Make sure any lumps are broken up, and set it aside.Step 2
Combine the mozzarella cheese and cream cheese in a microwave-safe bowl. Heat the cheeses for a total of 60 seconds in 20-second intervals, stirring between each one. Mix the egg into the cheese mixture vigorously. The mixture will separate first and then come together.Step 3
Finally, stir the dry ingredients into your wet ingredients. The final dough will be sticky and pasty. Spoon the dough into plastic wrap, and use the spoon to flatten the dough into a disk for quick setting. Give the top of a dough a light sprinkle of almond flour before wrapping and putting it in the fridge.Step 4
Refrigerate the dough for at least 30 minutes before using. You may freeze the dough for about 10 minutes before using to make it even easier to handle.

Very good. I baked it in the air fryer for 15 mins at 325 spread out on parchment paper, when the top got brown i covered it with aluminum foil. The bottom was still doughy so I flipped it and browned the bottom. Then brushed on melted butter with oregano and garlic power. I also did not let it sit 30 minutes in the fridge because the rest of my dinner was ready. It is very similar to cheesy bread. Yum!

I'm confused..... is this recipe for ONE serving ie use for one pizza base or it says FOUR servings further down???? Which is it One or four servings for the recipe ? Please

In my opinion it makes enough dough for 4 people, but the serving NUTRITION is for 1 so divide the dough into 4 servings (note the weight per serving 2.9 ounces or 81 gms) and then 1 of those serving is for 1 per person, hope this helps, I know sometimes it can be confusing

Flaxseed meal would work. We can’t use almond or coconut flour and flaxseed meal has been a great substitute.

I’m thinking about Lupin flour — fewer carbs than almonds — The Lupin’s are beans — I think maybe related to peanuts. I get Aviate Lupin flour, lupin flakes, and lupin pastas through Amazon 🙏😎🖖

Brown rice flour is not Keto. You can try using ground sunflower seed?

Preheat the oven to 350. Take the chilled dough out of the fridge and finger press it onto a pan of your choosing. Cook the crust for 15 minutes. Take the crust out of the oven and add the tomato sauce and toppings, put it back in the oven and cook for an additional 10-15 minutes.

I tried this. Love love love it. However the center of my pizza was soft. Out side crispy. Maybe thine crust or on a pizza stone next time. But so yummy with all my fixings. Couldn't even tell if wasn't pizza dough

Does it have to be almond flour? Can coconut flour be used instead?

You can’t do a straight sub because as someone else mentioned it will be a hockey puck but there is a low carb coconut flour pizza crust on this app. Try that recipe.

no. Coconut flour does not have the denisity plus it absorbs a ridiculous amount of water. You would end up with a hockey puck.

Am I missing something? What do you do with this once chilled? Roll out? Shape into something? Bake it? Fry it? What temp and time? Not a complete recipe.

Hi! Maybe I can help. I have a Keto bagel recipe, with the same ingredients. From mine and for bagels, so you might need to watch and play w it a bit for alternate uses. I heat oven to 400 F. For bagels, roll into logs. Shape the logs to circles (parchment paper line the baking sheet). Bake for 11-14 mins. Cool l, then toast herbed cream cheese. Hope this helps.
