    1-½ cup, shredded

  • Mayo

  • Tomato Ketchup

  • Pickles

  • Step 1

    Preheat an oven to 400 degrees. In a large mixing bowl, combine the ground chuck with all the seasonings and the cheddar cheese.

    Line a large sheet tray with aluminum foil and spray gently with pan spray. Use your hands to form approximately 24, 2-inch meatballs.

    Bake the tray of meatballs for 25 minutes. While the meatballs are baking, make the special sauce topping. Stir together the mayo and ketchup. Then, finely dice your pickle and stir this in as well. Then finer you dice the pickle, the better the result will be.

    After baking, place about a ½ teaspoon of special sauce in a dollop atop each meatballs. You do not need to spread the sauce, as it will begin to spread by itself because of the heat.

    Bake the meatballs for an additional 10 minutes. Serve the meatballs as a snack with toothpicks or include it in your meal prepping.

      Used a different cheese and different sauce instead of ketchup. Tasted phenomenal. 1 ot 2 is great for a snack or eat a couple more and you've got a meal. Wife approved of this recipe

        I'm confused what does it mean when it says 1 x 4 meatballs for the serving? I can have anywhere from 1 to 4????

          Very good made it with garlic green olives very good. Made a bunch and froze it for lunches. Froze without cheese or the in when we eat it.

                      These were amazing. I made exactly as written. I use a smaller meatball scoop do I ended up with close to 36 meatballs. Next time I will use a bigger meatball scoop and double the sauce.

                          Love this recipe! Only problem, fat content has to be off. Most of the fat from meat and cheese is left in the pan. 🤷🏼‍♀️

                            So good!!! Even my picky husband scarfed them up! I also added a little onion to some and bacon to other in addition to the ones that I followed the original recipe. This was a really good Friday night dinner. I paired them with some zucchini fries.
