  • Bacon

    Bacon

    2 medium slice

  • Shredded Cheddar Cheese

    ½ cup, shredded

  • Chives Raw

    Chives Raw

    1 tbsp chopped

  • Step 1

    Preheat an oven to 375 degrees. Cook the bacon in a pan on medium-high heat until the bacon is very crispy. Set the bacon aside to cool and chop it into small pieces.

    Fill an oven-safe baking dish with prepared cauliflower mash. Top it with the chopped bacon and shredded cheddar cheese.

    Bake the loaded cauliflower mash for 20-25 minutes, or until it’s heated through and the cheese has melted. You may also leave it under a hot broiler for 5 minutes to brown the cheese. Top with chopped chives for serving!

          Once you have cooked the cauliflower florets, put them in cheese cloth and squeeze as much water out as possible. You will be amazed! Then add butter, cream cheese , a little parm and salt and pepper to taste. When I cook my cauliflower in my Instant Pot, I break it into florets and trim off the stems, place in steamer basket with a sliced garlic clove and cook on high 4 minutes then immediately release pressure.

          Basically you cook cauliflower and mash it - you can add a bit of butter and milk like you would regular mashed potatoes. Hope that helps :)

        So there are a ton of ways to make cauliflower mash. I've seen recipes with cream cheese, recipes with sour cream, recipes with buttermilk, etc. The recipe you use can alter the nutrition information, so I wouldn't necessarily go by the info for this recipe. Having said that, loaded cauliflower mash? Oh yum!!

            Costco has frozen organic cauliflower mash, which saves a bunch of prep time. It's not too terrible by itself, but who am I to forego adding cheese and bacon?!

                      Yes, of course! If possible, drain away or cook off excess liquid from thawing before loading up with toppings.

                      When I added this meal I didn't realize I had to make the cauliflower mash first. So, I dis not buy heavy cream. Is there something I can use as a substitute?? Thanks! BTW: I am new to all of this. Currently on day 2.

                                I know, right! I mean... you'd think it would be included. When I make a meal plan, I don't read the recipe to see how to prepare it. I just buy the ingredients it tells me to buy! Was gonna make this last week, but noooo. I was missing one of the ingredients from the main recipe. Doh!
