  • Step 1

    Add the walnuts to a dry skillet over a low/medium heat and toast gently for 3-4 minutes.

    Finely dice the cucumber and tomato and thinly slice the radishes and red onion. Add to a serving bowl and toss to combine.

    Crumble the walnuts and feta over the salad. Season to taste and toss to combine.

    Whisk together the oil, syrup and lemon juice and drizzle over the salad to serve.

    You call this "Low Carb"? Standard keto is 20 grams per DAY - NOT per meal! I've seen more and more recipes on carbmanager that are high carb like this one. What are you thinking???

      Not all Low carb recipes qualify as Keto recipes, as the two diets have different macros. I did Keto before and I'm on a low carb high fat now, I can eat double the carbs I ate with Keto.

      It’s 7g net carbs for 1 serving. Not sure where you got that calculation.

      Definitely only count net carbs and if you’re gonna be a snowflake on here attacking carbs, use apple cider vinegar in place of lemon juice to reduce glucose production by as much as 30-40% from this salad

      I hear you. I get frustrated when I search for keto and get low carb instead. Technically low carb is below 50 grams/day so it fits into low carb but not keto. For keto, I count ALL my carbs.

      When counting carbs for Low Carb or Keto diets, you deduct fiber and artificial sweetener to get “net carbs” … so that would make this meal 6.9 net carbs - quite reasonable for a meal.

      I can say I go by net carbs and not total and this seems like a nice refreshing salad. Not everyone does total carbs

        Great salad! Made exactly as posted with no changes at all. Loved the feta addition as it added a creaminess with each bite.
