  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Finely dice the onion, tomato and avocado and roughly chop the cilantro. Add to a mixing bowl along with the lime juice, zest, salt and pepper. Mix together well to combine.

    Slice a pocket into each chicken breast, taking care not to cut all the way through.

    Divide the salsa evenly between each chicken breast, filling the center.

    Carefully seal the filling by wrapping each chicken breast with three strips of bacon.

    Arrange the chicken breasts on a shallow oven tray and bake for 20-25 minutes or until completely cooked through and the bacon is golden and crisp.

      Very good. I only had one very large chicken breast, so I flattened it down with a mallet; laid bacon under the flattened chicken; laid the filling on top of the chicken and rolled the whole thing up. The bacon helps keeps the roll together. This made two nice portions. Served with Keto Spicy Baja Coleslaw from this site. Nice combo.

          I’m definitely going to be making this on a regular basis. It’s very flavorful & the chicken is so moist & tender & it’s very easy to make. The only thing I did differently was I put in about 1/2 onion instead of a 1/4 & I baked it for 35 minutes. ❤️❤️❤️

            This dish was very easy to make and is now one of our favorites. The different flavors coming together have this tasting like something made by a top chef. I finely chopped the onion, tomato, and cilantro, and doubled the cilantro and lime zest.

                          Has anyone tried this in an air fryer?

                            I just made this using an air fryer. Preheat fryer 5 minutes or so at 370 degrees. Cook 10 minutes, turn and watch it for 10 minutes more or until done, watch closely for bacon to turn golden.

                          I made it for the entire family! It was delicious! Everyone loved it! I added garlic and cumin. I also used turkey bacon. Yummy!!!
