Curly Shoestring Keto Zucchini Fries

This crispy, crunchy, salty finger-food is perfect for a snack or an easy side dish to a meal. These curly shoestring zucchini fries are similar to frizzled onions or fried onion strings. The zucchini is spiralized into thin, long strands, which bake in your oven to super crispy. What helps the zucchini turn crispy is a coating of pork rind breading. Pork rinds add that extra-crunchy, fried texture to the fries without having to actually fry anything! Eat the curly fries straight with your fingers or dip them in a squirt of ketchup or a Keto dipping sauce. You can search “sauce” in the Carb Manager recipe library for a variety of options. Keep the finished curly shoestring fries in your refrigerator for up to 3 days. Simply microwave them to re-heat.

Can I Use Butternut Squash?

If you’d like to substitute the zucchini for a different vegetable, you can substitute it with butternut squash. Butternut squash is similar in texture and will spiralize like zucchini will. However, while butternut squash makes a great substitute, it is a little higher in carbs. Expect each serving of this recipe to have about 12g of carbohydrates if you use butternut squash. Both zucchini and butternut squash can be found already spiralized and packaged in some grocery stores in the produce section!

Adding More Flavor

If you’d like to bump up the flavor of this basic and simple Keto snack recipe, it’s all in the seasonings. Before breading the zucchini fries in pork rinds, you can season them with a variety of spices. For a Southwest-inspired flavor, season the fries with cumin, hot paprika, and onion powder. Serving the fries with a Keto cheeseburger? Season them with garlic powder and Italian seasoning. You can even season the pork rind crumbs with spices as well!

  • Step 1

    Prep the zucchini at least 30 minutes before you want to bake them. Use a spiralizer to cut the zucchini into long, thin spirals. Avoid breaking the long pieces into small pieces - it will be more beneficial to leave them longer until later. Spread the spiralized zucchini out on a clean sheet tray. Place paper towels over the zucchini and weigh them down with a heavy dish, such as a glass baking dish.

    Leave the zucchini alone for 30 minutes to give the paper towels enough time to absorb the extra moisture. After 30 minutes, season the zucchini with seasoned salt and black pepper. Use a pair of tongs to gently toss the zucchini with the seasonings. Then, transfer the spiralized zucchini to a large Ziploc bag. Turn on an oven to preheat to 400 degrees and line a sheet tray with parchment paper.

    Meanwhile, in a food processor, grind the pork rinds into a fine crumb, like breadcrumbs. Add the ground pork rinds to the Ziploc bag. Seal the bag with air trapped inside, and shake the bag until the zucchini is coated in all the ground pork rinds. Pour the curly fries out onto the prepared sheet tray, spreading the pieces out for even baking. Bake the tray for 25 minutes, or until the curly fries are dried and crispy. Serve by weight with your favorite Keto dipping sauce.
