Keto Instant Pot Rotisserie Chicken

Cooking a whole chicken could not be any easier with an Instant Pot! Simply add spices and seasonings, sear the chicken in the pot and then set the pressure for 25 minutes! The ingredient list states a 20 oz chicken for nutritional purposes, but use a small 3 lb raw, whole chicken to yield 20 oz!

  • Step 1

    Pat chicken completely dry with paper towels. Mix the spices together with the avocado oil (except for about 1 teaspoon) and rub over the chicken.

    Set the Instant Pot to the Saute setting and wait until the pot says HOT. Add 1 t avocado oil. Add the chicken breast side down and sear for 5 minutes without disturbing it. Flip and repeat on the other side for 5 minutes.

    Once chicken is seared, add the broth and cover. Set pot to HIGH pressure for 25 minutes.

    Wow!!!! This recipe is a flavor bomb! I could never have store-bought ones because the meat somehow always had a preservative smell. Tried so many stores and eventually gave up. Today, I tried this with air-chilled thigh pieces, and omg, I am licking my instant pot to get every drop of this dish

          Net carbs. Fiber, starch, and sugar go towards net carbs

          Natural release is what I’ve done to keep the chicken moist. Also, I sprinkle Bone Suckin’ Sauce’s Chicken Seasoning Rub between the skin and chicken and in the cavity of the chicken. You can stain the broth and use it to make chicken soup too. Thanks for the recommendation to brown the chicken first.
