The simplicity of a sheet tray dinner is so nice on weeknights. The trick here is to layer the ingredients on the sheet tray in the order of how long they take to cook. For example, the fish will take the longest to cook so place the fish in the oven first and then toss the vegetables around the fish later so the whole meal will be done at the same time. The zucchini and green beans taste so delicious and sweet roasted at a high temp too!

Ingredients

  • Cod

    4 Pacific cod fillet

  • Montreal Steak Seasoning by Mccormick

    2 tsp

  •  Zucchini

    Zucchini

    2 medium

  • Green Beans

    Green Beans

    1 cup

  • Olive Oil

    Olive Oil

    2 teaspoon

  • Kosher Salt

    Kosher Salt

    ¼ teaspoon

  • Step 1

    Preheat oven to 400 F. Place fish on a sheet tray next to each other, but not touching.

    Sprinkle Montreal seasoning evenly over the top of the fish. No need to season both sides.

    Wash and trim the ends of the green beans. Cut zucchini into thick matchsticks by cutting each in half the long way, then in thirds the long way and then in half again to make them shorter. Toss veggies with olive oil and kosher salt.

    Bake fish for 10 minutes and then place veggies around the fish and bake for another 12-15 minutes until internal temperature of fish is 145 F.

    Squick & easy. Didn’t have the McCormick spice dk just used regular steak seasoning. Added Asparagus as well. Even my wife said “it was decent” which is huge fir a deep-fried fish lover m.

        Good low carb cod recipe. I modified with a butter, garlic and basil sauce on the fish. 25 minutes cooking is too long. I do 15-20 minutes depending on the amount of cod and put the vegetables in at the beginning.

        Recipe was easy to follow. I had to substitute with catfish since I didn't have cod and substituted the green beans with asparagus. Should have cooked the bass for 20 minutes rather than 22 minutes using my Oven.

          Yeah I just tossed the veggies in with the fish at the same time I also substituted broccoli for green beans

            Hello! Thank you so much for your comment. We like our veggies crispy, but you can toss the veggies in at the same time as the fish if you'd like your veggies less al dente!
