  • Step 1

    Preheat an oven to 325 degrees, and line a baking tray with parchment paper. In a stand mixer, whip together the egg white and stevia into a stiff meringue. You should stiff and glossy peaks.

    By hand with a spatula, fold the vanilla and coconut into the meringue, being careful not to deflate the meringue.

    Use a tablespoon measurer to portion out approx. 8 macaroons onto your parchment paper. Pack each tablespoon so the macaroons are dense.

    Bake the tray for 15-18 minutes. The bottoms and edges should be golden brown while the centers are chewy. Allow the macaroons to cool fully before sprinkling a pinch of cocoa powder over each one. Enjoy!

    Excellent. Only tried with monk fruit powder, I use one quarter teaspoon of monk powder for every tablespoon of artificial sugar. Also omitted the chocolate powder.

        I don’t like artificial sweeteners so I tried them without the stevia. I added the dark cocoa powder right into the mix. They are definitely light, crispy vs chewy , with their own delightful taste. It’ll work in a pinch but nothing compares to Marischiewicz !!

          Hmm. Nutritional's don’t seem right. Carbs minus fiber is right but for net carbs dont we need to also subtract the alcohol sugars? Thanks for everyone’s tweeks. Can you just eat one? Or do you have 2?

            used 2 egg whites and 1 3/4 T monk fruit sweetener with a heaping cup of shredded coconut. soooooo good! ended up with 10 good sized macaroons. didn’t even add the cocoa powder

              Good. I substituted Swerve for the Stevia - I used one cup (Swerve) and I will make these again with only 3/4 cup of Swerve. Note: before baking, I placed an almond in the middle and a thin 95% cocoa dark chocolate over the almond - just large enough to cover the almond. Decadent. 😀

                Swerve and stevia measure differently. As I recall, swerve measures like sugar.

                    This came out all kinds of wrong. The eggs never peaked, maybe there’s a difference in the amount of monk fruit to stevia that I’m not aware of. Anyhow, they’re sitting in the oven looking like egg white and coconut cookies — guess we’ll see how they taste.

                      Any oil, grease or egg yolk will prevent the egg whites from whipping properly. Use a glass, ceramic or metal bowl, absolutely clean using soap and hot water. Same for beaters. Separate the eggs into a cup away from the main bowl, so you are sure no yolk gets in!

                      If you have any yolk in your egg white it will not beat to stiff peaks fyi

                      Used 2 egg whites as recommended and monk fruit, since I have never liked stevia....delicious treat! Everyone in family loved it!

                        I just made these and I feel too they are dry. I personally think the recipe should call for 2 egg whites. I weighed my coconut since it gave me the grams and it ended up looking more like 1 1/2 cups of coconut. But it probably depends on how fluffy your coconut is LOL. It definitely filled a craving 😊 Happy new year to those who celebrate Rosh Hashanah

                          Just made these and they are very dry. I used the flaked coconut, followed all directions and baked for 15 min. Any thoughts or suggestions?

                                Could you use cinnamon in replacement of the cocoa powder ? Would it change the macros much ?

                                  If you are using 100% cacao powder (no sugar), your macros won't change by replacing with cinnamon.

                                    I think you may be thinking of the egg white/almond flour cookie and not the shredded coconut/egg white cookie. They have similar spellings but are completely different cookies.

                                    I just made this and they are amazing. This are perfect to give your self a sweet treat. I did substitute the Stevia for Munk fruit and put in just a little more vanilla.
