Keto Spinach Feta Pecan Salad

This salad is super quick and easy to make on a weeknight as a side with chicken, salmon or pork chops. The vinaigrette is simply a 1:1 ratio of vinegar to olive oil, so you really could use any vinegar you would like. I prefer to use apple cider vinegar because it has an inherent sweetness, but has no carbs or added sugar. It lends itself to a balanced vinaigrette without needing to add any sugar. The feta is nice and salty and tastes so delicious with the tart dressing and toasty pecans.

Ingredients

  • Spinach

  • Step 1

    Preheat oven to 450 F. Toast pecans for 3 mins. Let cool.

    Cut a red onion in quarters and slice one quarter very thin.

    In a small bowl whisk together the oil, vinegar, salt and pepper to taste (for me this is a couple good pinches of salt and several good cracks of pepper).

    In a large bowl combine the spinach, red onion, toasted pecans and crumbled feta (I like to crumble the feta super large). Add half of the vinaigrette and gently toss the salad. Serve the rest of the dressing on the side. Serve immediately! You can always prepare the salad without the dressing for up to a day in advance, just add dressing before serving.

              Really Yummy! For the vinegar part I used balsamic vinegar and balsamic glaze (1/2 and 1/2) So good!

                          Great salad, straightforward and quick to make. I wouldn't bother toasting the pecans as it takes up more time and makes the pecans taste slightly bitter. The pecans are best left natural and roughly chopped.

                              I can't believe how good this salad is! My tastebuds are happy, very satisfying. I roasted my pecans earlier today and it added such a delicious flavor and crunch. I can't wait to make this again and add some chicken for more protein! I love salad again. :)

                                                Used avocado oil instead of olive oil and red wine vinegar instead of apple cider vinegar. After being on this diet for about eight or nine days, I have ended up with an inflamed personal place, and I think it’s from not eating enough alkaline vegetables. You can find a list of them on the Internet and try to eat them every day. I also was having diet Coke and things like that and not enough water. So it’s not just about carbs and fats and proteins. I’ve also decided to have a cup of organic vegetable broth every day, and I think it has 10 cal and no carbs. I heat it in a coffee cup. I have been doing bulletproof coffee, and I know that is very acidic, so I’m going to adjust it a little bit. I like it and I think it helps burn the fat!🔥 However, I can’t take the feminine female inferno. I feel like I’m sitting on a volcano. If this happens to you, get one of those freezer ice packs, not too big. Wrap it in a pillowcase, lie down, and treat the area. I know that this is not about this recipe, but I think people need to know this. The first week I was on this diet I lost 4 pounds. I’m very pleased with that and will continue on but I will eat more alkaline vegetables and drink them and more water, and cut back the soft drinks.
