Keto Brie Crisps

Brie is a delicious keto-friendly cheese! These are super simple to make and all you need is a microwave and some parchment paper. The trick is to cut the brie into very small pieces and place them on the parchment paper on a plate far from each other, only doing a few at a time. Keep an eye on them in the microwave for when they start to turn brown, this could be 1-2 minutes depending on your microwave! Let cool and remove from the paper and voila! A fun, simple snack that you can season anyway you would like! These would be great on a salad or charcuterie plate.

Ingredients

  • Brie Cheese

    Brie Cheese

  • Step 1

    Line a large microwave safe plate with a piece of parchment paper cut in half. Cut brie into a ½” slab and remove the rind (it will be about 1 oz in weight including the rind). Cut each slab in half to make two thin strips and cut each strip into 10 very small cubes. So each 1 oz of brie will make 20 cubes that are about ½” x ½”.

    Place 3 small cubes on the parchment paper, making sure they are very far from each other as the brie is going to melt. Place in the microwave on full power for 1-2 minutes. The cheese will bubble and melt into a puddle, then start to turn brown. Pull it from the microwave just as it is turning brown. Let it cool slightly on the parchment before removing it and repeating this process again. Sprinkle cheese crisps with any seasoning you would like. I chose cayenne pepper!

    So yummy! Just an FYI is doesn’t work with just the rind. I tried it just to see because I’m cheap and I usually eat the rind anyway. Not good! 😂

            For flexibility, the nutirionals are for 1 crisp but eat as many as will fit in your macros and count the additional crisps.

            I do this with cheddar. I spread the cheese out on a paper plate (the smooth shiny kind) and nuke it for 2.5 - 3 minutes. Once it cools you can break it into smaller pieces.
