Line a loaf tin with plastic wrap so that it covers the base and sides and overhangs the edge.Step 2
Add the erythritol to a food processor and blend until powdered.Step 3
Add the cream cheese and strawberries and blend again until smooth and creamy.Step 4
Add the cream to a stand mixer with a whisk attachment. Whip the cream until light and fluffy and soft peaks form.Step 5
Gently fold the strawberry and cream cheese mixture into the whipped cream until fully combined.Step 6
Spoon the mixture into the lined loaf tin and transfer to the freezer for a minimum of 4 hours to set.Step 7
Optionally serve with fresh berries.
