Keto Saffron Rice

This variation on cauliflower rice can be ready to go in under 10 minutes. Include this as a side dish to your keto curries, stews, or Eastern-inspired dishes. Saffron can typically be found in specialty grocery stores or in international aisles. Only a small amount is needed to produce the aromatic flavors.

  • Unsalted Butter

    Unsalted Butter

  • Step 1

    Toss fresh cauliflower rice in a pan with the salt, curry powder, and saffron. Heat over medium-high heat until the excess liquid from the cauliflower evaporates and the cauliflower turns a darker golden brown and yellows from the saffron.

    Turn the heat down to low and melt the butter in the pan. Gently stir until all cauliflower is coated in butter. Serve immediately.

    Seems like a lot of Saffron. Is a half teaspoon correct?

      Yes! But use as much or as little as you like - the saffron won't effect your carbs.

    Can I substitute Tumeric for the saffron?

      Although not quite the same, turmeric will add wonderful health benefits! Start with just a 1/4 tsp and add more to taste.
