For ultimate flexibility, the serving size is set to one meatball so you can log as many meatballs as will fit your macros.

What other kinds of ground meat can I use?

Meatballs are best when different ground meats are used. Common combinations are ground beef/ground pork or ground beef/Italian sausage. Use them in a 50/50 ratio. Italian sausage is already seasoned, so if you use a ground beef/ground pork combo, add additional salt.

Why are whole fresh herbs added at the end?

Adults like the flavor of herbs, but kids usually do not want to see pieces of green in their food. Opt to use whole, fresh parsley and basil to add extra flavor to the marinara then discard them before serving.

Recipe Steps

    In a medium-sized mixing bowl, add the ground beef and ground Italian pork sausage. Add the salt and pepper. Mix well using your hands to incorporate the meats and seasonings and parmesan cheese.

    Using a 1 oz cookie scoop, scoop the meat and then place in the palm of hands to roll into a meatball. Place on a plate and repeat with all the meat. Set aside.

    Heat an Instant Pot on the “saute” function until it says HOT. Add the avocado oil. Add half of the meatballs one at a time and sear them on the first side for 3-4 minutes until browned.

    Use a metal spatula to remove them from the pan and flip them, cooking for another 3-4 minutes.

    Remove meatballs to a plate and set aside, browning the next batch of meatballs.

    Add all meatballs back into the pot.

    Add the marinara sauce, sliced garlic, water, and fresh herbs.

    Set the Instant Pot to cook on high pressure for 10 minutes using a natural release or quick release.

    Beware the Carb value is based on 1 meatball. Nobody eats just 1 meatball. I find this misleading.

      Recipe only says to add the hamburger. Doesn’t say the ground pork .. just says mix the “meats”. I understand that it means both of the meats but others might not
