This delicious salad is so quick and easy to throw together! The salad combines thinly shredded cabbage with fresh herbs, spices, and a simple lemon garlic dressing. While many salads need to be consumed right after preparation so they don’t get soggy, this salad holds up excellently the next day and can be made in advance. Top the salad with some beef, chicken, or lamb, or just enjoy on its own!

  • Step 1

    Cut the cabbage into quarters and cut out the core. Slice each quarter very thinly. Add the cabbage to a large mixing bowl.

    Grate the carrot on a box grater or with the grater attachment of a food processor. Chop a scallion and a handful of fresh parsley. Add vegetables to the bowl.

    Grate a garlic clove with a microplane or other small grater. Roughly chop the pistachios. Zest a lemon and add the zest, pistachios and grated garlic to the bowl.

    Add the paprika, cumin, salt, lemon juice and olive oil to the bowl.

    Mix the salad with your hands, gently massaging all of the ingredients as you go.

    Dig in and enjoy the salad on its own, or top with chicken, beef, or lamb!

    It’s delicious. It’s more delicious with cilantro then parsley. Salting it properly is important. It tastes even better if you let it sit for a bit before you eat it, even up to a day ahead.

              You can change the number of servings in the serves box. I deleted 4 and entered 2 the the ingredient quantities were adjusted for 2

            I m new here...so I am to have 1 serving, yet these ingredients are for 4 servings?...so m I to only prepare 1/4...so my salad serve will only have less than 1 spoon of pistachio??

              Or, make up the recipe as is and portion it out for 4 servings. Eat one now and the other three over the next 3 days.

              Yes, it can be tricky working with some of these recipes if you're the only one eating keto -- and more so if it's not something that stores well. For this particular recipe the notes at the top say this salad does do well the second day so you could make half of the recipe and enjoy it 2 days in a row. Welcome to keto! Hang in with it and you'll quickly get it figured out!

                        Syrian here 👋🏼 We don’t normally add pistachio or nuts to this salad, but I’m going to try it with the pistachio to see how it tastes. For those who are saying the flavors in this recipe are lacking, try adding (1) dried mint and (2) sumac. Both can be found in Middle Eastern or international grocery stores (the sumac adds color and a tart zing, if you don’t have dried mint, try adding a few chopped mint leaves with the parsley). I would personally forego the smoked paprika, as I feel it doesn’t go well with salads. If you want some heat, you can add some chil pepper flakes. For those who think it can be more sour, try adding apple cider or red wine vinegar in lieu of, or in addition to, the lemon juice. Something that will also give it a sour-slightly sweet flavor is pomegranate molasses, if you’d like to add that to the dressing. I would mix the dressing separately, so all its ingredients are incorporated prior to pouring it over the veggies. I’m planning on mixing together: garlic, salt, 1/2 lemon juice 1/2 red wine vinegar, olive oil, cumin, dried mint, and sumac, then drizzling that over the salad and mixing. You have a proper Middle Eastern dressing there 👌🏼 To give some alternative recommendations to the veggies, you can forego the carrots and add radishes instead (or include both!). Or, you could add tomatoes and bell peppers, and even avocado if you’d like. The cabbage can be red or green. You could add green onion, or sliced/diced white onion if you don’t have green. The parsley gives it a distinct middle eastern flavor and is a common feature to our salads, but it doesn’t have to be a lot - a handful or 1/4 cup. When chopped up, a sprig might yield more than that. You could freeze the rest and use in dishes later (no need to thaw) or place it in an open Tupperware with paper towels (to absorb moisture) in the fridge for a couple days.

                        This was fresh tasting but did not leave me full. This would be better as a side dish for me but at 7N carbs is a main dish. Now I’m looking around for what else to eat. If I make it again I will take it easy on the parsley as I’m not a huge fan of that particular flavor.

                          This is definitely a favorite. I don’t usually add any nuts but I do add an egg. Delicious! I just push cabbage mixture to the side and scramble an egg then mix altogether.

                            I thought this was going to be awful but it was delicious. I used smoked paprika, my kitchen stank of cabbage afterwards, I like that it keeps too. Was a bit hit with the husband.
