Keto Fudgesicles
These fudgesicles are creamy, delicious and best of all super easy to make. I used heavy cream and milk, but substitute both of these for any kind of milk to make them paleo. The addition of xanthan gum will keep any milk creamy and smooth after freezing. They are even better without real sugar!

Ingredients
The Ultimate Icing Sugar Replacement by Swerve
¾ cup
100% Cocoa Special Dark by Hershey's
½ cup
Heavy Cream
1 cup
Original Coconut Milk Unsweetened by Silk
1 cup
Baking Aids Xanthan Gum by Bob's Red Mill
2 teaspoon
Salt, Sea Salt
⅛ teaspoon
Vanilla Extract
½ teaspoon
Recipe Steps

Step 1
Combine all dry ingredients in a small saucepan together with a whisk.Step 2
Add in some of the coconut milk to make a thick paste.Step 3
Then add in all the milk and cream and whisk well.Step 4
Place over low heat until the mixture comes together and thickens. You most likely will not need to heat the mixture much at all. It should still be cool to the touch. Fill popsicle molds and freeze until solid 6-8 hours or overnight.Step 5
Run the molds under warm water to release the popsicles and serve immediately!

I had used a recipe almost identical to this, but can no longer find it on the internet. The only difference is there was no xanthan gum in it (unnecessary), and I used unsweetened plain almond milk instead of coconut milk, and Pyure sweetener (I don't like Swerve or any 100% erythritol sweetener). They are amazing and taste just like the real thing! Great to have in the freezer to keep yourself from running to DQ when it gets warm and the craving for ice cream hits!

I made these and left out the erythritol and used liquid Sucralose instead. Then divided into 8 popsicles. 3 carbs each. This is by far the best keto fudgecicles I’ve made yet. This recipe is definitely a keeper!!!
