The way this dish is to be enjoyed is by taking a spoonful of tofu and a small amount of ginger sauce into your spoon and eating it together. Then every once in a while, take a bit of the softened, spicy ginger slices.

What kind of tofu should I use?

Use only silken tofu for this recipe as it is soft and custard-like. Perfect for eating like a dessert. Other tofu textures will not offer the same eating experience.

How much ginger can I add?

If you really like ginger, add as much as this recipe suggests below. If not, you can reduce the amount by half. You do not need to peel the ginger unless you desire to. During the cooking process, the ginger softens and is very easy to eat even with the peel.

    In a small saucepan, combine water, brown sugar sweetener, a pinch of kosher salt, and a 3” piece of ginger. The ginger does not need to be peeled unless you would like to. If you do peel the ginger, you can scrape off the ginger skin with a spoon instead of a paring knife for as little waste as possible.

    Bring the mixture to a boil and then down to a simmer. Simmer the mixture for at least 5 minutes. This will allow the ginger to release all its spicy flavor into the syrup. Turn the heat off and allow it to sit as you prep the silken tofu.

    Take a block of silken tofu and cut it into thin slices. A 19 oz net weight block of silken tofu can be cut into about 8 slices to make 4 bowls with two pieces of tofu each.

    Microwave the necessary amount of tofu in the microwave on high for 30-45 seconds to make the tofu hot. Drizzle a good amount of the brown sugar syrup onto the hot tofu. Also, add a couple of pieces of sliced ginger from the syrup. The best way to eat this is to take a small amount of tofu in each spoon along with some spicy ginger syrup. Then once in a while eat a small amount of ginger with it for extra heat. This is a great dish if you are feeling under the weather, but is still a great way to get protein into your diet.
