It starts with a base of protein, in this case, chicken breasts and thighs, drowning in tomato sauce, seasoning, and onion slices. These ingredients are cooked in a slow cooker, then sprinkled with Mexican blend shredded cheese and broiled to golden perfection.

Are enchiladas Keto?

Traditional enchiladas are not Keto-friendly because the chicken is wrapped in flour tortillas. If you omit the tortillas, then enchiladas can be Keto, but this depends on the other ingredients used and their quantities. For example, onions are a staple ingredient for making this Mexican dish; however, they are high in carbs and must be used in small amounts. Another ingredient to look out for when making enchiladas is the sauce. Store-bought enchilada tomato sauce often contains high-carb filler ingredients such as cornstarch.     To your crockpot, add the tomatoes, 3 tbsp lemon juice, cumin, garlic powder, onion powder, chili powder, melted butter, salt, and pepper. Whisk to combine. Thinly slice the onion and add it to the crockpot.

    Turn on your crockpot. Add the chicken breasts and thighs, and fully submerge them in the sauce. Place the lid on the pot, and cook on low for 8 hours or on high for 6 hours.

    Once the chicken is cooked, shred it into bite-size pieces using 2 forks. Preheat your oven’s broiler to 200 C/ 400 F. Top the chicken with the grated cheese and place the pot in the oven. Cook in the oven for 10 minutes or until the cheese is golden.

    To a small bowl, add the sour cream, 1 tbsp lemon juice, and lemon zest. Whisk to combine. Thinly slice the green onion, and mix it in.

    To serve, divide the casserole into 6 equal portions. Scoop one serving onto a plate, and top with a tablespoon of sour cream. Garnish with fresh cilantro.

          In the insta pot, I would set it to poultry, that's around 45 minutes, but you could do 30 if you're using boneless skinless thighs and breasts. You know it doesn't take that thing long to work it's magic and make slow cookers obselete. I would use the saute feature first personally, to get a light seat on the meat to make it more flavorful. And it's dead easy to soak some dried guajillo or a mix of peppers in hot water then blend them to make an authentic enchilada sauce.

          Yes! Freezes beautifully, we make a big batch and then portion it out meal sized and freeze. Makes an easy meal prep for many meals. Have you tried an insta pot? They are ah-mazing at taking meat cooked for 45 minutes into fork tender morsels like to used to take all day on the stove top. Not a sponsor, just love the ease of cooking with it.

          You can also use the Zero Carb Taco size tortillas if you want to have tortillas with it. I toasted them over the stover burner for a little more flavor.

          I used Rotel no salt added tomatoes and green chilis to spice it up some. Had to add more salt for flavor. A do over for sure!
